Low Carb White Chocolate Macadiamia Nut Cookies

However, when you're trying to eat healthier, it’s all about making small, smart changes so you can still enjoy your favorite treats without straying from your goals. That’s why these cookies are the perfect solution—they’re low-carb, keto-friendly, and THM-approved!

Recipe:

- 1 stick of butter, softened to room temperature

- 4 oz cream cheese, softened to room temperature

- 1/3 cup no-calorie brown sweetener (I recommend Truvia)

- 1/2 cup powdered no-calorie sweetener (I recommend Truvia)

- A few drops of liquid no-calorie sweetener

- 1/2 teaspoon vanilla extract

- 1 large egg (or 2 medium/small eggs)

- 1 1/2 scoops plain collagen peptides

- 1 teaspoon baking soda

- 2 cups almond flour

- 1/2 cup sugar-free white chocolate chips

- 2/3 cup macadamia nuts

 

Mix the ingredients thoroughly. Scoop the mixture onto a parchment-lined cookie sheet. Use a damp hand to flatten the cookies to your desired shape. Bake at 325°F for 19-20 minutes.
