Recipe:
1/2 c almond flour
1/4 c cocoa
1/4t salt
1/2 t baking powder
1/2c no calorie sweetener
liquid no calorie sweetener to taste (optional)
1 c cottage cheese
2 large eggs
1 t vanilla
1/2 c lily's chocolate chips
In a mixing bowl, combine almond flour, cocoa powder, salt, baking powder, and your choice of sweetener. In a food processor or blender, blend the cottage cheese until smooth, then mix in the eggs, vanilla extract, and liquid sweetener. Gradually incorporate the wet ingredients into the dry mixture, stirring until fully combined. Fold in the chocolate chips. Prepare 20 silicone cupcake molds by lightly coating them with cooking spray. Evenly divide the batter among the molds. For baking in the oven: Preheat to 350°F and bake for approximately 20 minutes or until a toothpick inserted into the center comes out clean. For baking in an air fryer: Set to 330°F and bake for about 6 minutes or until done. Let cool slightly before serving and enjoy!
