Pancakes THM- Keto

The pancakes are classified as an "S" on the THM plan and are also keto-friendly, making them a perfect low-carb option.

Recipe: 

1 8oz cream cheese softened

8 eggs

6 T oat fiber

2 t xanthan gum

1 T cinnamon.

 

Combine all ingredients in a food processor and blend until smooth.

Cook the batter just like you would regular pancakes.

 

These pancakes freeze well, so you can make a big batch and store them for later!
